Zincacantan was founded in 2012 by mezcalera Fabiola Torres-Monfil and her co-founder Diana Pinzon. Based in Southern Puebla in the town of San Diego de la Mesa Tochimiltzingo, Fabiola’s family has been making mezcal for over three hundred years. Making only 1,500 liters per year, Fabiola & Diana have partnered to create one of the most ecologically-minded mezcal projects in the world.
